The SH-201 uses basic waveforms to construct the sound. For realistic sounds (pianos, strings), you use samples (or in the case of some instruments, physical modeling - see Pianoteq). In the video you also see a Korg Triton LE below the 201 - this uses samples, and it can do those sounds. With the 201, you don't actually save the sound - just the positions of all the knobs. Vocals are recorded as straight audio parts (or done by a sampler).

Im just wondering, if u want to use software patches like strings or vocals, can you save them onto the machine, or does it have to be plugged to a computer to use like piano patches at all?

Sounds great, except your when you 'arpregiate', you are using a variable number of keys, which sounds horrible.
